Wylie Dufresne, head chef of WD~50 is one heck of a creative genius. The guy regularly turns familiar ingredients into completely alien-looking and remarkably delicious dishes. Food Republic got the opportunity to talk to the chef about the breakdown of one of the restaurant’s most famous classics: egg ravioli.
