For those curious about what goes on in chefs’ minds when creating and plating dishes, look no further. Gilt Taste is producing a series of short videos and articles in which they talk to chefs about  what inspires the aesthetics of particular dishes and what it’s like to plate from start to finish. We’re nerding out a bit on how neat it is to finally understand how and why a plate appears as it does.

In this installment GT interviewed Alex Stupak, the innovative young chef backing Empellon Cocina, about his elevated Mexican mole. Stupak explains along every step of the way his philosophy behind the visuals.
