Lobster, Cherries, and Fava Beans at Wallsé!

Lobster with Cherries, Fava Beans, and Bérnaise Sauce

One of my favorite dishes as Wallsé is the Poached Lobster with Cherries, Fava Beans, and Bérnaise sauce. Like a beautiful Tom Waits song, it is a dish that you just can’t get enough of. I came up with this recipe almost by accident! I was making another lobster dish when a crate of gorgeous cherries for a chocolate dessert came in. I experimented, adding the cherries to a port-red wine reduction, and realized that the two paired great together!

I am always happy when July rolls around, because it means that I will be able to find the freshest cherries and fava beans at the market. Well, now is that time! This incredible dish is finally back on the menu at Wallsé and I want to share the recipe with Im In the Kitchen so that loyal foodies can make it at home!
